La Panzanella
A fresh, summery, inexpensive and traditional dish with rustic origins. A good result will depend on the good quality of the ingredients used, from the water used to moisten the bread to the oil used to season the dish.
Ingredients:
4 slices of stale crusty bread
1 red onion
2 tomatoes
1 cucumber
1 stick of celery
basil, salt, pepper
Method:
Soften the bread in lukewarm water. Finely slice the onion and leave in a mix of cold water and vinegar for about an hour. Squeeze the bread well and crumble it into a bowl. Add the soaked onion, the chopped tomato, the sliced cucumber and celery and the basil. Mix together well to bring the flavours together and season, not forgetting the extra virgin olive oil from our hills
