 The olive tree is one of the most common features of the Tuscan landscape, and of that around Pistoia. Extra-virgin olive oil is produced by cold-pressing the olives with a stone mill, which gives the product its much-praised flavour and fragrance. Excellent used for bruschetta and as a dressing.
